Ingredients
- 2 cups all-purpose flour
- 1/2 tsp baking soda
- 2 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 tsp pumpkin pie spice
- 1/2 tsp salt
- 1 15oz can pure pumpkin
- 1/4 cup vegetable or coconut oil
- 1 cup oat milk
- 1/4 cup brown sugar
- 3/4 cup white sugar
Method
- Combine all-purpose flour, baking soda, baking powder, cinnamon, nutmeg, pumpkin pie spice, and salt in a large mixing bowl.
- In a separate bowl, mix the pure pumpkin, vegetable or coconut oil, oat milk, brown sugar, and white sugar until well combined.
- Pour the wet ingredients into the dry ingredients and mix for no more than 20 to 30 seconds until just combined.
- Preheat oven to 350°F (175°C).
- Line muffin pan with cupcake liners or spray with non-stick spray.
- Fill the muffin liners all the way to the top with batter.
- Bake at 350°F (175°C) for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
- Remove muffins from oven and transfer to a cooling rack.
- Allow to cool completely before storing.
