- 1 medium potato
- 1 carrot
- 1 onion
- 6 to 7 spring onions
- 3/4 cup (110 grams) chickpea flour
- 1/3 cup (80 ml) plant based milk
- 1/2 tsp salt
- 1/2 tsp ground cumin
- black pepper to taste
- olive oil
Method
- Grate the potato, carrot, and onion.
- Chop the spring onions finely.
- Combine the grated vegetables and spring onions in a bowl.
- Add chickpea flour, plant based milk, salt, ground cumin, and black pepper to the vegetables.
- Mix everything well to form a batter.
- Heat olive oil in a frying pan over medium heat.
- Spoon the batter into the pan and flatten to form fritters.
- Cook each fritter for a few minutes on each side until golden brown and cooked through.
- Remove from the pan and drain excess oil on paper towels.
- Serve warm.
