Vegetable and Bean Stew

Ingredients
- 1 onion, diced
- 2 cloves of garlic, chopped
- little oil
- 2 peppers (red and yellow), diced
- 2 potatoes, diced
- 1 tbsp tomato paste
- 1 tsp smoked paprika powder
- ½ tsp cumin
- 1 tsp marjoram
- Salt
- Pepper
- 400 ml vegetable stock (approx. 1 ⅔ cups)
- 1 tin of kidney beans (240 g drained weight, approx. 1 cup)
Method

Fry the onion and garlic in a little oil until translucent.

Add the peppers and potatoes and fry briefly.

Stir in the tomato paste, smoked paprika, cumin, marjoram, salt, and pepper.

Add the vegetable stock and cover to simmer for approx. 20 minutes until the potatoes are soft.

Add the kidney beans and cook for 5 minutes.
