Ingredients

  • 1 onion, diced
  • 2 cloves of garlic, chopped
  • little oil
  • 2 peppers (red and yellow), diced
  • 2 potatoes, diced
  • 1 tbsp tomato paste
  • 1 tsp smoked paprika powder
  • ½ tsp cumin
  • 1 tsp marjoram
  • Salt
  • Pepper
  • 400 ml vegetable stock (approx. 1 ⅔ cups)
  • 1 tin of kidney beans (240 g drained weight, approx. 1 cup)

Method

  1. 1

    Fry the onion and garlic in a little oil until translucent.

  2. 2

    Add the peppers and potatoes and fry briefly.

  3. 3

    Stir in the tomato paste, smoked paprika, cumin, marjoram, salt, and pepper.

  4. 4

    Add the vegetable stock and cover to simmer for approx. 20 minutes until the potatoes are soft.

  5. 5

    Add the kidney beans and cook for 5 minutes.
