Cabbage Rolls with Beef, Mushrooms and Beans

Ingredients

• 1 head cabbage
• 500 g ground beef
• 200 g mushrooms, chopped
• 2 garlic cloves, finely chopped
• 1 onion, finely chopped
• 1 carrot, grated
• 200 g canned beans, drained
• 1 tomato, diced
• 3 tbsp tomato sauce
• 1 bunch parsley, chopped
• 1 tsp sugar
• Salt, to taste
• Black pepper, to taste
• Dried oregano, to taste
• Vegetable oil, for frying

Method

1. Preheat the oven to 180°C (350°F).
2. Wash the cabbage and carefully separate the leaves.
3. Bring a large saucepan of salted water to the boil.
4. Boil the cabbage leaves for approximately 10 minutes.
5. Drain and leave the leaves to cool.
6. Finely chop the onion, garlic, carrot and mushrooms.
7. Heat a little vegetable oil in a frying pan.
8. Cook the ground beef until browned.
9. Add the onion, garlic, carrot and mushrooms.
10. Cook until the vegetables have softened.
11. Stir in the beans, tomato and tomato sauce.
12. Add the sugar, salt, black pepper and oregano.
13. Mix until evenly combined.
14. Place a portion of filling onto each cabbage leaf.
15. Fold in the sides and roll tightly.
16. Arrange the rolls in a baking dish.
17. Bake for approximately 25 minutes.
18. Check that the filling is fully cooked.
19. Sprinkle with parsley and serve.
