- Butter
- Salt
- Tarragon
- Bay leaves
- Thyme

- White wine

Method
- Finely chop the shallots.
- Slice the garlic.
- Cut the mushrooms into small pieces.
- Dredge the chicken in flour.
- Heat a pan with butter.
- Place the chicken skin side down.
- Flip once golden brown.
- Sear on the other side and set aside.
- Sauté the shallots.
- Add the garlic and cook until golden.
- Add the mushrooms.
- Add salt.
- Add tarragon, bay leaves & thyme.
- Season with pepper to taste.
- Cook until the mushrooms are done.
- Deglaze with white wine and let it reduce.
- Add the tomatoes.
- Add the stock.
- Return the chicken to the pan.
- Simmer covered for 40–45 minutes.
- Sprinkle with chopped tarragon.
- Serve with roasted potatoes.
