Whole recipe (4 servings): 1852 kcal

  • 4 bone-in chicken thighs or 4 small chicken portions
  • 2 shallots, finely chopped
  • 2 cloves garlic, sliced
  • 250 g mushrooms, sliced
  • 2 tbsp plain flour, for dusting chicken
  • 30 g butter
  • 1 tbsp olive oil
  • 1 tbsp chopped fresh tarragon, plus extra to finish
  • 2 bay leaves
  • 2 sprigs fresh thyme
  • 150 ml dry white wine
  • 200 g chopped tomatoes
  • 300 ml chicken stock
  • salt and black pepper, to taste
  • roasted potatoes, to serve

Method

22 steps
  1. Finely chop the shallots.
  2. Slice the garlic.
  3. Cut the mushrooms into small pieces.
  4. Dredge the chicken in flour.
  5. Heat a pan with butter.
  6. Place the chicken skin side down.
  7. Flip once golden brown.
  8. Sear on the other side and set aside.
  9. Sauté the shallots.
  10. Add the garlic and cook until golden.
  11. Add the mushrooms.
  12. Add salt.
  13. Add tarragon, bay leaves & thyme.
  14. Season with pepper to taste.
  15. Cook until the mushrooms are done.
  16. Deglaze with white wine and let it reduce.
  17. Add the tomatoes.
  18. Add the stock.
  19. Return the chicken to the pan.
  20. Simmer covered for 40–45 minutes.
  21. Sprinkle with chopped tarragon.
  22. Serve with roasted potatoes.

Helpful tips

  • Brown the chicken well before removing it from the pan.
  • Let the wine reduce before adding the tomatoes and stock.
  • Keep the pan covered while the chicken simmers so it remains moist.
  • Remove the bay leaves before serving.
