- 2 tbsp sugar
- 20 g fresh yeast
- 250 ml warm milk
- 1 egg
- 1 egg yolk
- 80 g butter
- 5-6 g salt
- 2 apples
- Juice of half a lemon
- 150 g all-purpose flour (for crumble)
- 100 g sugar (for crumble)
- 10 g cinnamon
- 8 g vanilla sugar
- 80 g butter (for crumble)
Method
- Knead the dough with flour, sugar, yeast, warm milk, egg, egg yolk, butter and salt.
- Let the dough rest for 60 minutes.
- Prepare the filling with apples and lemon juice.
- Shape the buns and fill them with the apple filling.
- Make the crumble with flour, sugar, cinnamon, vanilla sugar and butter.
- Brush the buns with the egg-milk mixture.
- Sprinkle the crumble on the buns.
- Bake the buns at 180 °C for 25-30 minutes.
