Method
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Boil the potatoes in salted water for 15–20 minutes, until completely tender.
- Drain thoroughly and mash until smooth.
- Beat in the butter, cream, Parmesan, salt and paprika.
- Transfer the mash to a piping bag fitted with a large star nozzle.
- Pipe tall tree shapes onto the prepared baking sheet.
- Bake for 15–20 minutes, until the ridges are lightly golden.
- Meanwhile, heat the olive oil in a large skillet.
- Cook the chicken until browned and cooked through, then transfer it to a plate.
- Add the onion, mushrooms, pepper, sun-dried tomatoes and garlic to the skillet.
- Cook until softened and the mushroom liquid has evaporated.
- Add the spinach and cook just until wilted.
- Return the chicken to the pan.
- Stir together the cream, Dijon mustard, lemon juice and butter, then add the sauce to the pan.
- Simmer gently for 3–5 minutes and season to taste.
- Arrange lettuce leaves on a serving platter.
- Place the potato trees on the platter and spoon the chicken and mushroom mixture around them.
