Tender Egg Yolk Cookies with White Chocolate

Ingredients

• 2 egg yolks
• 1/3 tsp salt
• 1 tsp vanilla sugar
• 80 g powdered sugar
• 90 g vegetable oil
• Zest of one lemon
• 30 g cornstarch
• 180-200 g flour
• 1 tsp baking powder
• Sugar for rolling
• Powdered sugar for rolling
• Desiccated coconut for decorating
• 80 g white chocolate

Method

1. Mix egg yolks, salt, vanilla sugar, and powdered sugar.
2. Add vegetable oil and lemon zest and mix everything.
3. Stir in cornstarch, flour, and baking powder and form a kneadable dough.
4. Shape small rolls from the dough, fold and braid them.
5. Roll half of the cookies in sugar, the other half in powdered sugar.
6. Bake the cookies at 180 °C for about 15 minutes.
7. Let the cookies cool.
8. Melt the white chocolate.
9. Dip the cookie edges in chocolate and roll them in powdered sugar or desiccated coconut.
