Ingredients
- 100 g almonds
- 2 eggs
- 1 pinch salt
- 100 g icing sugar
- 8 g vanilla sugar
- 100 ml vegetable oil
- 50 g cornflour
- 300–330 g plain flour
- 10 g baking powder
- 1 tsp turmeric
- 2 tbsp cocoa powder
Method
- Toast the almonds in a dry pan until fragrant.
- Leave them to cool, then chop or grind them finely.
- Preheat the oven to 180°C (350°F).
- Line a baking tray with baking paper.
- Mix the eggs, salt, icing sugar and vanilla sugar.
- Add the vegetable oil and cornflour.
- Mix the flour with the baking powder.
- Add the flour mixture gradually until a soft, slightly tacky dough forms.
- Divide the dough into two equal portions.
- Mix the almonds and turmeric into one half.
- Mix the cocoa powder into the other half.
- Divide both doughs into equal small portions and roll them into balls.
- Flatten one chocolate ball.
- Place one almond dough ball in the centre.
- Wrap the chocolate dough around the almond centre and seal.
- Arrange the cookies on the prepared tray.
- Make decorative cuts or impressions in the tops.
- Bake for approximately 20 minutes.
- Leave to cool on the tray for 5 minutes before transferring to a wire rack.
