17 ingredients- 275 g or 1 3/4 cup all-purpose flour
- 5 g or 1 teaspoon yeast
- 70 g or 1/2 cup warmed milk
- 1 egg
- 35 g or 2 teaspoons sugar
- 5 g or 1/2 teaspoon salt
- 60 g or 5 tablespoons butter
- 250 g or 2-3 apples (Granny Smith or Honeycrisp)
- 2-3 tablespoons butter
- 2 teaspoons cinnamon
- 2 tablespoons sugar
- 2 teaspoons cider vinegar
- 1/2 lemon juice
- Pinch of salt
- 1 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 3-4 tablespoons milk
Method
18 steps- Combine flour, sugar, salt, and yeast in a medium bowl.
- Cut in butter with hands until incorporated.
- Add warm milk and egg, stir with a spoon to combine.
- Knead dough by hand for 4-5 minutes until shiny and no butter chunks are visible.
- Place dough in a covered container and ferment in a warm place for 2 hours.
- Prepare apples: cut into slabs, discard core, medium dice.
- Heat 2 tablespoons butter in a large nonstick saute pan over high heat.
- Add apples, cook until coated and browned, about 90 seconds.
- Add sugar and cinnamon, cook for 90 seconds more.
- Deglaze with cider vinegar and lemon juice, cook for 10-15 seconds to reduce liquid.
- Set apple mixture aside to cool.
- After fermentation, turn dough onto floured surface, roll to about 1/2 inch thick rectangle.
- Spread apple mixture over dough, then roll into a loaf shape.
- Cut into 1-inch thick disks, then stretch and flour to about 1/2 inch thick.
- Fry 4 fritters in hot oil (about 360°F) for 2 minutes per side.
- Remove and drain on a wire rack.
- Mix powdered sugar, vanilla, salt, and milk to make glaze.
- Glaze fritters while still warm or cooled, as preferred.
