  • 275 g or 1 3/4 cup all-purpose flour
  • 5 g or 1 teaspoon yeast
  • 70 g or 1/2 cup warmed milk
  • 1 egg
  • 35 g or 2 teaspoons sugar
  • 5 g or 1/2 teaspoon salt
  • 60 g or 5 tablespoons butter
  • 250 g or 2-3 apples (Granny Smith or Honeycrisp)
  • 2-3 tablespoons butter
  • 2 teaspoons cinnamon
  • 2 tablespoons sugar
  • 2 teaspoons cider vinegar
  • 1/2 lemon juice
  • Pinch of salt
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 3-4 tablespoons milk

Method

  1. Combine flour, sugar, salt, and yeast in a medium bowl.
  2. Cut in butter with hands until incorporated.
  3. Add warm milk and egg, stir with a spoon to combine.
  4. Knead dough by hand for 4-5 minutes until shiny and no butter chunks are visible.
  5. Place dough in a covered container and ferment in a warm place for 2 hours.
  6. Prepare apples: cut into slabs, discard core, medium dice.
  7. Heat 2 tablespoons butter in a large nonstick saute pan over high heat.
  8. Add apples, cook until coated and browned, about 90 seconds.
  9. Add sugar and cinnamon, cook for 90 seconds more.
  10. Deglaze with cider vinegar and lemon juice, cook for 10-15 seconds to reduce liquid.
  11. Set apple mixture aside to cool.
  12. After fermentation, turn dough onto floured surface, roll to about 1/2 inch thick rectangle.
  13. Spread apple mixture over dough, then roll into a loaf shape.
  14. Cut into 1-inch thick disks, then stretch and flour to about 1/2 inch thick.
  15. Fry 4 fritters in hot oil (about 360°F) for 2 minutes per side.
  16. Remove and drain on a wire rack.
  17. Mix powdered sugar, vanilla, salt, and milk to make glaze.
  18. Glaze fritters while still warm or cooled, as preferred.
