  • 150 g unsalted butter
  • 2 large apples
  • 140 g sugar
  • 2 medium eggs
  • 1–2 g vanillin / 8 g vanilla sugar / 1 tsp vanilla extract
  • 60 g Greek yogurt or sour cream
  • 15 ml rum
  • 130 g all-purpose flour
  • a pinch of salt
  • 1 tsp baking powder
  • 1 tbsp granulated sugar
  • 1 tbsp brown sugar

Method

  1. Add 2/3 cup (150 g) of unsalted butter to a pan and melt over medium-low heat, cooking for about 6-7 minutes until it turns brown and develops a nutty aroma. Remove from heat and pour into a container to cool and solidify.
  2. Peel and cut 2 large apples into small cubes. Optionally, sprinkle with lemon juice.
  3. In a mixing bowl, beat 115 g of browned butter and 140 g of sugar for about 2 minutes until light and fluffy.
  4. Add 2 medium eggs one at a time, beating well after each addition.
  5. Mix in 1–2 g of vanillin, 8 g of vanilla sugar, or 1 tsp vanilla extract.
  6. Add 60 g of Greek yogurt or sour cream and 1 tbsp of rum, mixing well.
  7. In a separate bowl, combine 130 g of all-purpose flour, a pinch of salt, and 1 tsp of baking powder. Mix dry ingredients and add to wet ingredients, mixing until just combined.
  8. Gently fold in the apple cubes with a spatula.
  9. Preheat oven to 355°F (180°C). Grease a 9-inch (22-23 cm) baking pan and pour the batter into it.
  10. Sprinkle 1 tbsp granulated sugar and 1 tbsp brown sugar evenly over the top.
  11. Bake for approximately 40-45 minutes until a toothpick inserted in the center comes out clean.
  12. Allow the cake to cool on a wire rack before removing from the pan.
