Ingredients

  • extra firm tofu
  • scallions
  • ginger
  • garlic
  • red bell pepper
  • salt
  • oil (neutral oil)
  • water
  • corn starch

Method

  1. Slice the tofu in half lengthwise, then into crosswise pieces about 1/3 to 1/2 inch thick.
  2. Press the tofu with a heavy object or cookbook to remove excess water.
  3. Chop the white and light green parts of scallions into 1-inch pieces; slice the green parts into bias slices and soak in ice water if desired.
  4. Chop four garlic cloves and 1 inch of fresh ginger.
  5. Slice the red bell pepper into strips.
  6. Season the tofu with a little salt.
  7. Heat a large non-stick skillet over medium-high heat and add a few tablespoons of oil.
  8. Fry the tofu until golden brown and crisp, then remove and set aside.
  9. Add the bell peppers to the skillet and stir fry for about 2 minutes until crisp tender.
  10. Prepare the braising sauce and simmer for about 5 minutes to thicken.
  11. Make a slurry with 1/2 cup water and 1 tablespoon corn starch, whisking well.
  12. Fold the fried tofu into the sauce, then simmer gently for about 10 minutes until coated and flavorful.
