Ingredients
- extra firm tofu
- scallions
- ginger
- garlic
- red bell pepper
- salt
- oil (neutral oil)
- water
- corn starch
Method
- Slice the tofu in half lengthwise, then into crosswise pieces about 1/3 to 1/2 inch thick.
- Press the tofu with a heavy object or cookbook to remove excess water.
- Chop the white and light green parts of scallions into 1-inch pieces; slice the green parts into bias slices and soak in ice water if desired.
- Chop four garlic cloves and 1 inch of fresh ginger.
- Slice the red bell pepper into strips.
- Season the tofu with a little salt.
- Heat a large non-stick skillet over medium-high heat and add a few tablespoons of oil.
- Fry the tofu until golden brown and crisp, then remove and set aside.
- Add the bell peppers to the skillet and stir fry for about 2 minutes until crisp tender.
- Prepare the braising sauce and simmer for about 5 minutes to thicken.
- Make a slurry with 1/2 cup water and 1 tablespoon corn starch, whisking well.
- Fold the fried tofu into the sauce, then simmer gently for about 10 minutes until coated and flavorful.
