Ingredients
- 1 pack instant ramen
- 1 small carrot
- 6 mushrooms
- 1 tsp minced garlic
- 1 small chicken breast
- 2.5 cups water
- spring onions/scallions
- chilli oil (optional)
- 1 tbsp soy sauce (optional)
- 1 tsp sugar (optional)
- salt to taste
- butter or oil for frying
Method
- Finely chop carrot and 4-5 mushrooms; slice 2 mushrooms for garnish.
- Mince garlic.
- Heat oil in a pot and sauté carrot, mushrooms, and garlic until lightly browned.
- Add water and seasoning packet or soy sauce, sugar, and salt.
- Add chicken breast, cover, and simmer for 10 minutes.
- Fry sliced mushrooms in butter or oil until golden brown.
- Remove chicken, let rest 5 minutes, then shred.
- Adjust broth seasoning to taste.
- Cook noodles according to packet instructions without overcooking.
- Assemble bowl with noodles, shredded chicken, fried mushrooms, spring onions, and chilli oil.
