- 250g Cottage cheese
- 1 Egg
- 1/3 cup (80ml) Maple syrup
- 2½ cups + 1 tablespoon (260g) Almond flour/ground almonds
- 3/4 teaspoon Baking powder
- 1/4 cup (40g) Chocolate chips (optional)
- 1 teaspoon Vanilla extract (optional)

Method
- Preheat the oven to 350°F (180°C). Line a baking tray with parchment paper.
- In a blender or food processor, combine cottage cheese, egg, maple syrup, and vanilla extract. Blend until smooth.
- Transfer the mixture to a bowl. Add almond flour and baking powder, then mix until a dough forms.
- Fold in the chocolate chips or other mix-ins of your choice.
- Using an ice cream scoop, portion the dough onto the prepared baking tray. Slightly flatten each mound and top with extra chocolate chips if desired.
- Bake for 15-16 minutes, or until lightly golden.
- Allow the cookies to cool on the tray for 5 minutes, then transfer to a wire rack to cool completely.
