  • 250 g cottage cheese
  • 1 egg
  • 1/3 cup (80 ml) maple syrup
  • 2 1/2 cups plus 1 tbsp (260 g) almond flour or ground almonds
  • 3/4 tsp baking powder
  • 40 g chocolate chips, optional
  • 1 tsp vanilla extract, optional

Method

14 steps
  1. Preheat the oven to 180°C.
  2. Line a baking tray with baking paper.
  3. Place the cottage cheese, egg, maple syrup and vanilla, if using, in a blender.
  4. Blend until completely smooth.
  5. Transfer the mixture to a bowl.
  6. Add the almond flour and baking powder.
  7. Mix until a soft cookie dough forms.
  8. Fold in the chocolate chips, if using.
  9. Divide the dough into 16 portions on the prepared tray.
  10. Flatten each portion slightly.
  11. Add a few extra chocolate chips on top, if desired.
  12. Bake for 15–16 minutes, until lightly golden.
  13. Cool on the tray for 5 minutes.
  14. Transfer to a wire rack and cool completely.
