  • 250g Cottage cheese
  • 1 Egg
  • 1/3 cup (80ml) Maple syrup
  • 2½ cups + 1 tablespoon (260g) Almond flour/ground almonds
  • 3/4 teaspoon Baking powder
  • 1/4 cup (40g) Chocolate chips (optional)
  • 1 teaspoon Vanilla extract (optional)

Method

  1. Preheat the oven to 350°F (180°C). Line a baking tray with parchment paper.
  2. In a blender or food processor, combine cottage cheese, egg, maple syrup, and vanilla extract. Blend until smooth.
  3. Transfer the mixture to a bowl. Add almond flour and baking powder, then mix until a dough forms.
  4. Fold in the chocolate chips or other mix-ins of your choice.
  5. Using an ice cream scoop, portion the dough onto the prepared baking tray. Slightly flatten each mound and top with extra chocolate chips if desired.
  6. Bake for 15-16 minutes, or until lightly golden.
  7. Allow the cookies to cool on the tray for 5 minutes, then transfer to a wire rack to cool completely.

  • Blend the cottage cheese mixture until completely smooth.
  • Flatten the dough portions slightly before baking.
  • Let the cookies rest on the tray before moving them to a rack.

Storage
