  • 110 g unsalted butter, melted
  • 150 g light brown sugar
  • 115 g granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 180 g plain flour
  • 1/2 teaspoon bicarbonate of soda
  • 1/2 teaspoon salt
  • 200 g chocolate chips

Method

10 steps
  1. Preheat the oven to 180°C, or 160°C fan, and line a baking tray with parchment paper.
  2. Whisk together the melted butter, light brown sugar and granulated sugar until smooth and fully combined.
  3. Add the egg and vanilla extract and whisk until evenly incorporated.
  4. Add the plain flour, bicarbonate of soda and salt.
  5. Fold gently until a soft cookie dough forms, taking care not to overmix.
  6. Fold the chocolate chips evenly through the dough.
  7. Scoop approximately 1 tablespoon of dough for each cookie and roll into small balls.
  8. Arrange the cookie dough balls on the prepared tray, leaving space between them to spread.
  9. Bake for approximately 5 minutes, until the edges are lightly golden and the centres still look soft.
  10. Leave the cookies on the tray for several minutes to firm up before transferring them to a wire rack.

  • Keep the dough balls small so they bake evenly in five minutes.
  • Leave space between the cookies on the baking sheet.
  • Let the cookies cool slightly so they can firm up.
