  • 8 oz (250g) pasta mista
  • 8 oz (250g) Yukon Gold potatoes, cubed
  • 8 oz (250g) butternut squash, cubed
  • 1/2 yellow onion, chopped
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • 1 tbsp tomato paste
  • Extra virgin olive oil
  • Salt, to taste
  • Parmigiano Reggiano, grated
  • Vegetable broth, as needed (about 1.5 liters / 6 cups)

Method

8 steps
  1. Add a generous drizzle of olive oil to a pot over medium heat. Add the chopped onion, carrot, and celery and sauté until softened.
  2. Add the tomato paste and cook for about 1 minute, stirring it into the vegetables.
  3. Add the cubed potatoes and butternut squash and sauté everything together for another minute.
  4. Season with salt and pour in enough vegetable broth to cover the vegetables.
  5. Bring to a simmer and cook for about 15–20 minutes, or until the potatoes and squash begin to soften.
  6. Add the pasta directly to the pot. Add more broth as needed so there is enough liquid for the pasta to cook.
  7. Cook until the pasta is al dente, stirring often. As everything cooks together, the potatoes and squash will begin to break down and make the dish naturally creamy.
  8. Turn off the heat and stir in freshly grated Parmigiano Reggiano.
