Ingredients
- pitta bread
- olive oil
- cumin seeds
- salt
- pepper
- chicken breasts
- 1 clove garlic
- 1 tsp coriander seeds
- 1 unwaxed lemon
- mint leaves
- 1 cucumber
- 1/2 clove garlic
- Greek yoghurt
- extra virgin olive oil
- white cabbage
- white onion
- fresh coriander
- sesame seeds
Method
- Preheat oven to 200°C.
- Pull apart pitta bread and crumble it.
- Drizzle pitta with oil, sprinkle cumin seeds, salt, and pepper.
- Roast pitta for 10 minutes until crispy.
- Grate zest of lemon and mix with crushed garlic, coriander seeds, pepper, and oil to make marinade.
- Cut chicken breasts into strips and coat with marinade.
- Thread chicken strips onto skewers.
- Heat griddle pan until very hot.
- Cook chicken skewers on griddle until juices run clear.
- Grate cucumber and squeeze out excess liquid.
- Mix grated cucumber, chopped mint, grated garlic, salt, pepper, yoghurt, and olive oil to make tzatziki.
- Shred white cabbage and white onion finely.
- Mix cabbage and onion with lemon juice, salt, and olive oil to make coleslaw.
- Place roasted pitta on platter.
- Spread tzatziki over pitta.
- Place cooked chicken skewers on tzatziki.
- Top with coleslaw and fresh coriander.
- Sprinkle sesame seeds over the dish.
