  • 1 batch prepared and proofed yeast doughnut dough
  • Food-safe cotton cooking twine
  • Frying oil, as required by the doughnut recipe
  • 1 batch prepared doughnut glaze
  • 100 g melted chocolate, for spider decorations
  • 1 tablespoon cocoa powder, optional
  • Orange or green food coloring, optional

Method

13 steps
  1. Prepare and proof a complete, tested yeast doughnut dough according to its own recipe.
  2. Divide the dough into 12–20 portions, depending on the desired size.
  3. Shape some portions as standard ring or filled doughnuts.
  4. For pumpkin shapes, form dough balls and loosely tie food-safe cotton twine around each ball to create segments.
  5. Allow the shaped dough to complete its final proof according to the dough recipe.
  6. Heat the frying oil to the temperature specified by the complete doughnut recipe.
  7. Fry the doughnuts until evenly golden and fully cooked.
  8. Drain on a rack or paper towels.
  9. Carefully remove the twine from the pumpkin doughnuts.
  10. Prepare the glaze according to its own complete recipe.
  11. Color some glaze orange or green for pumpkin decorations.
  12. Use melted chocolate to pipe spider bodies and legs.
  13. Allow all decorations to set before serving.
