  • 3 apples
  • 120 g plain flour
  • 1 tsp baking powder
  • 2 eggs
  • 130 g butter
  • 150 g sugar
  • 1 tsp vanilla extract
  • 60 ml milk

Method

12 steps
  1. Put the flour and baking powder into a bowl and whisk together.
  2. In another bowl, whisk the eggs until well broken down.
  3. Add the sugar to the eggs and whisk until well creamed.
  4. Add the milk, vanilla extract, and melted butter to the egg mixture and whisk to a smooth, creamy batter.
  5. Fold the flour into the wet ingredients until well combined and lump-free.
  6. Peel, core, and thinly slice the apples.
  7. Add the sliced apples to the batter and mix to coat evenly.
  8. Pour the batter with apples into a greased 9-inch (22 cm) cake tin lined with greaseproof paper.
  9. Flatten the apples slightly on top.
  10. Bake in a preheated oven at 180°C (356°F, Gas mark 4) for 35-40 minutes.
  11. Check doneness with a skewer; it should come out clean.
  12. Allow to cool slightly before serving.
