12 ingredients- 150g chicken, or another protein of your choice, cut into small bite-sized pieces
- 1 tsp soy sauce or fish sauce
- 2 tsp vegetable oil (for chicken marinade)
- 1 Tbsp vegetable oil
- 2 Tbsp green curry paste
- ¼ cup coconut milk
- 1-1.5 tsp fish sauce
- 1 tsp sugar
- 1 cup veggies of your choice, small dice
- 2 kaffir lime leaves, julienned
- 300 g cooked white rice
- ½ cup Thai basil

Method
9 steps- Marinate the chicken with 1 tsp soy sauce or fish sauce and 2 tsp vegetable oil.
- Heat 1 Tbsp vegetable oil in a pan, add the marinated chicken, and cook until done.
- Add 2 Tbsp green curry paste to the pan and cook until fragrant.
- Pour in ¼ cup coconut milk and stir to combine.
- Add 1-1.5 tsp fish sauce and 1 tsp sugar, adjusting to taste.
- Add 1 cup diced vegetables and cook until tender.
- Stir in cooked white rice and mix well.
- Add julienned kaffir lime leaves and cook for a minute.
- Turn off heat and toss in ½ cup Thai basil, mixing gently.

- Adjust the amount of green curry paste to control spiciness.
- Add vegetables of your choice for variety and color.
- Toss in Thai basil off the heat to preserve flavor and color.
- Use leftover cooked rice for best results.
