  • 150g chicken, or another protein of your choice, cut into small bite-sized pieces
  • 1 tsp soy sauce or fish sauce
  • 2 tsp vegetable oil (for chicken marinade)
  • 1 Tbsp vegetable oil
  • 2 Tbsp green curry paste
  • ¼ cup coconut milk
  • 1-1.5 tsp fish sauce
  • 1 tsp sugar
  • 1 cup veggies of your choice, small dice
  • 2 kaffir lime leaves, julienned
  • 300 g cooked white rice
  • ½ cup Thai basil

Method

9 steps
  1. Marinate the chicken with 1 tsp soy sauce or fish sauce and 2 tsp vegetable oil.
  2. Heat 1 Tbsp vegetable oil in a pan, add the marinated chicken, and cook until done.
  3. Add 2 Tbsp green curry paste to the pan and cook until fragrant.
  4. Pour in ¼ cup coconut milk and stir to combine.
  5. Add 1-1.5 tsp fish sauce and 1 tsp sugar, adjusting to taste.
  6. Add 1 cup diced vegetables and cook until tender.
  7. Stir in cooked white rice and mix well.
  8. Add julienned kaffir lime leaves and cook for a minute.
  9. Turn off heat and toss in ½ cup Thai basil, mixing gently.
