  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups cottage cheese, fat-free, low-fat or full-fat
  • 1 tablespoon pickled jalapeño slices, finely chopped
  • 1 egg, whisked for egg wash
  • 1/2 cup shredded light cheddar cheese

Method

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Finely chop the pickled jalapeño slices and shred the cheddar cheese.
  3. Mix the flour, baking powder and salt thoroughly in a large bowl.
  4. Add the cottage cheese and chopped jalapeño. Mix until combined; the mixture will initially look crumbly.
  5. Turn the dough onto a lightly floured work surface and knead for 2 to 3 minutes, until completely combined.
  6. Divide the dough into 8 equal pieces. Roll each piece into a ball, poke a hole through the centre and shape it into a bagel.
  7. Place the bagels on the prepared baking sheet.
  8. Brush each bagel with whisked egg and top with shredded cheddar.
  9. Bake at 350°F (175°C) for 25 to 28 minutes, until cooked through.
  10. Cool for at least 20 minutes before slicing so the cottage cheese dough can set.

Helpful tips

  • Knead for 2 to 3 minutes even if the dough initially appears crumbly.
  • Lightly flour the work surface to prevent sticking.
  • Finely chop the jalapeño so it distributes evenly.
  • Allow the bagels to cool for at least 20 minutes before cutting.
  • For self-rising flour, use 2 cups and omit the baking powder and salt.
