4 ingredients- 4 medium potatoes (russets recommended)
- cold water
- 3 tablespoons salt
- 1 quart oil (peanut, safflower, corn, or vegetable oil)

- food processor with slicing attachment or mandolin
- deep fryer or large pot for frying
- paper towels
- cookie sheet (optional for keeping chips warm)
Method
15 steps- Peel four medium potatoes.
- Use a food processor with a slicing attachment or a mandolin to slice the potatoes into paper-thin rounds.
- Place the potato slices into a large bowl of cold water to avoid browning.
- Drain and rinse the potato slices.
- Refill the bowl with water and add 3 tablespoons of salt.
- Let the potatoes soak in the salty water for at least 30 minutes.
- Drain the potatoes after soaking.
- Rinse and drain again to remove excess starch.
- Blot dry the potato slices thoroughly before frying.
- Heat a quart of oil in a deep fryer to 365°F (185°C).
- Fry the potato slices in small batches until they turn golden brown.
- Remove the chips and drain on paper towels.
- Continue frying in batches until all slices are cooked.
- Optionally, place fried chips on a paper towel-lined cookie sheet and keep in an oven at 275°F (135°C) until all batches are fried.
- Season with additional salt before serving.
