Ingredients

3 ingredients
  • 1 cup honey
  • 2-3 tbsp hot chilli flakes or crushed dried chillies, or 1-2 sliced fresh hot chillies
  • 1 tbsp apple cider vinegar, optional

Method

7 steps
  1. Combine the honey and chilli flakes, crushed dried chillies or sliced fresh chillies in a small saucepan.
  2. Set the saucepan over low heat and warm the mixture gently until it becomes fluid and small bubbles begin to appear around the edges. Do not allow the honey to boil.
  3. Keep the honey over low heat for about 5 minutes, stirring occasionally, so the chilli flavour infuses into it.
  4. Remove the saucepan from the heat and stir in the optional apple cider vinegar.
  5. Leave the hot honey to cool and infuse for at least 10 minutes.
  6. Strain out the chilli pieces for a smooth sauce, or leave them in for a stronger flavour.
  7. Transfer the cooled hot honey to a clean, dry jar, seal it and store it in a cool place.

Additional tips

  • Hot honey can cause burns; allow it to cool before tasting or transferring it. Do not give honey to children younger than 12 months. If using fresh chillies, refrigerate the finished honey.
