Method

  6. Deglaze with fortified wine such as Madeira, bringing it to a boil and reducing if necessary.
  7. Place the mushroom mousse on the pastry, then position the beef fillet on top, using a piping bag to fill with mousse around the fillet.
  8. Wrap the fillet with the pastry and mousse, sealing properly.
  9. Bake or cook as desired, then serve with the prepared sauce.
