  • 285 g plain flour
  • 55 g self-raising flour
  • 115 g butter or cooking margarine
  • 55 g lard
  • pinch of salt
  • 70 ml cold water
  • bit of milk to seal top to base and moisten the tops

Method

14 steps
  1. Mix plain flour and self-raising flour together.
  2. Add cold butter and lard, then rub into the flour using fingertips until crumbly.
  3. Add a pinch of salt.
  4. Make a well in the centre and gradually add cold water, mixing until a smooth dough forms.
  5. Wrap the dough in a cloth and refrigerate for 30 to 40 minutes.
  6. Roll out the pastry to about 3 mm thickness on a floured surface.
  7. Cut out circles for the bases and tops using a cutter.
  8. Place the pastry circles into a muffin tin or baking tray.
  9. Fill each with a spoonful of mincemeat, avoiding overfilling.
  10. Cover with smaller pastry circles, seal edges by pressing down, and crimp if desired.
  11. Brush the tops with milk for a golden finish.
  12. Bake in a preheated oven at 180°C (fan oven) for about 15 minutes, or until golden.
  13. Remove from oven and let cool.
  14. Sprinkle with icing sugar before serving.
