Ingredients

  • 500 g cherries (frozen)
  • 70 g cornstarch
  • 150 g sugar
  • 150 ml water
  • 3 egg yolks
  • a pinch of salt
  • 80 g powdered sugar
  • 80 g melted butter
  • 1 tsp vanilla
  • 200 g flour
  • 1 tsp baking powder
  • 500 g Greek yogurt
  • 50 g cornstarch
  • 1 tsp vanilla
  • 3 egg whites
  • a pinch of salt
  • 130 g sugar

Method

  1. Mix the frozen cherries with cornstarch, sugar, and water.
  2. For the dough, combine egg yolks, salt, powdered sugar, melted butter, vanilla, flour, and baking powder in a bowl.
  3. Separate a small piece of dough and place it in the freezer for 15 minutes.
  4. Prepare the baking pan (20 cm).
  5. For the cream, mix Greek yogurt, cornstarch, and vanilla well.
  6. Whip egg whites with a pinch of salt and sugar until stiff and fold into the yogurt mixture.
  7. Assemble the cake by grating 1/3 of the frozen dough.
  8. Bake the cake for 40 minutes in a preheated oven at 180 °C (350 °F) or until the top rises evenly.
