Cheese-Herb Rolls

Ingredients

  • 250 ml yogurt or kefir
  • 5 g baking soda
  • 5 g salt
  • 1 piece egg (egg white)
  • 50 ml vegetable oil
  • 500-550 g flour
  • 140 g butter (for brushing)
  • 350 g cheese (grated)
  • 1 tbsp milk (for the egg yolk)
  • 1 tbsp cranberries
  • 1 tbsp blueberries
  • 1 tbsp rose hips
  • 2 tsp green tea

Method

  1. Mix all ingredients for the puff pastry: yogurt, baking soda, salt, egg white, vegetable oil, flour.
  2. Knead the dough in a bowl for 1-2 minutes, then knead on a floured surface for 5-7 minutes.
  3. Divide the dough into four equal parts and form balls. Cover and let rest for 5-10 minutes.
  4. Roll the dough out to 45 cm and brush with butter, then fold as shown in the video.
  5. Cover with plastic wrap and refrigerate for 1-1.5 hours.
  6. Prepare filling: grate cheese and mix with chopped herbs.
  7. Cut dough, place filling on each piece, form dough balls and fill.
  8. Place on a baking sheet and bake at 200 °C for 27-30 minutes.
  9. For the tea: pour boiling water over cranberries, blueberries, rose hips, and green tea and let steep for 5-10 minutes.
