  • 2 (7-ounce/200 g) bags cut fideo pasta
  • 4 medium tomatoes, chopped
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 2 teaspoons chicken and tomato bouillon
  • 2 tablespoons tomato paste
  • 6 cups (1.4 litres) water
  • 2 tablespoons neutral cooking oil
  • Lemon wedges or Tapatío sauce, for serving (optional)

Method

9 steps
  1. Place the tomatoes, onion, garlic, tomato paste and bouillon in a blender.
  2. Add enough water to blend the ingredients into a smooth tomato broth.
  3. Heat a thin layer of oil in a large saucepan over medium heat.
  4. Add the dry fideo and cook, stirring frequently, until the noodles are evenly toasted and lightly golden.
  5. Carefully pour the blended tomato broth into the saucepan.
  6. Add more water as needed to reach your preferred soup consistency.
  7. Bring to a simmer and cook for 10–15 minutes, until the fideo is tender.
  8. Taste and adjust the bouillon, salt and pepper.
  9. Serve hot with lemon wedges or Tapatío sauce, if desired.
