- 2 cups (400 g) granulated sugar
- 1 ¾ cups (220 g) all-purpose flour
- 1 cup (85 g) unsweetened cocoa powder
- 1 heaping teaspoon (5 g) baking powder
- 1 heaping teaspoon (7 g) baking soda
- 1/3 teaspoon (2 g) salt
- 2 large eggs
- 1 cup (240 ml) milk
- ½ cup (120 ml) vegetable oil
- 1 teaspoon (3 g) coffee
- 1 cup (240 ml) boiling water
- 2 teaspoons (10 ml) vanilla extract
- 3 egg yolks
- 1 heaping tablespoon (20 g) sugar
- 2/3 cup (140 ml) heavy cream
- 2 chocolate bars (200 g)
- 2/3 cup (140 ml) heavy cream
- 1 heaping tablespoon (20 g) sugar
Method
- Preheat oven to 350°F (175°C).
- Mix sugar, flour, cocoa powder, baking powder, baking soda, and salt.
- Add eggs, milk, vegetable oil, coffee, and vanilla extract; mix well.
- Stir in boiling water carefully.
- Pour batter into 9-inch diameter baking trays.
- Bake for 30 minutes.
- Let layers cool for at least 10 minutes before removing from molds.
- For frosting, whisk egg yolks and sugar.
- Heat 2/3 cup heavy cream and add to egg yolk mixture.
- Melt chocolate bars and combine with cream mixture.
- Whip remaining 2/3 cup heavy cream with sugar until stiff peaks form.
- Fold whipped cream into chocolate mixture to make frosting.
- Assemble cake layers and spread frosting evenly.
- If frosting hardens, melt gently in double boiler and whip until smooth.
