Ingredients

  • 28.5 mini Kinder chocolate bars
  • 280g shortbread biscuits
  • 75g salted or unsalted butter, melted
  • 250ml double cream, cold
  • 500g cream cheese, room temp
  • 200g Kinder chocolate
  • 120g icing sugar
  • 150g white chocolate
  • 90ml double cream

Method

  1. Prepare the biscuit base by crushing the shortbread biscuits and mixing with melted butter.
  2. Press the biscuit mixture into the base of an 8-inch tin to form the crust.
  3. In a bowl, whip the cold double cream until stiff peaks form.
  4. In another bowl, beat the cream cheese until smooth.
  5. Melt the Kinder chocolate and mix it into the cream cheese.
  6. Add icing sugar to the cream cheese mixture and combine well.
  7. Fold the whipped cream into the cream cheese mixture until fully incorporated.
  8. Pour the cheesecake filling over the biscuit base and smooth the top.
  9. Melt the white chocolate and heat the double cream to make ganache.
  10. Pour the ganache over the cheesecake and spread evenly.
  11. Chill in the refrigerator for several hours or until set.
