  • 2 cups rolled oats (ground into flour)
  • 1 cup hot milk
  • 2 ripe bananas
  • 1 large carrot, finely grated
  • Zest of 1 orange
  • Juice of 1 orange
  • 5–6 dates, chopped or blended
  • 1 cup thick sour cream or Greek yogurt
  • 8 oz (225 g) mascarpone
  • 4 tbsp honey or maple syrup

Method

    Grind the rolled oats into flour.

    Mix the oat flour with hot milk, ripe bananas, grated carrot, orange zest, orange juice, and chopped or blended dates to form the oat base.

    Prepare the cream frosting by combining thick sour cream or Greek yogurt with mascarpone and honey or maple syrup.

    Layer the oat base and finish with the creamy honey mascarpone frosting.

    Serve the pie soft and juicy.
