  • 4 whole eggs
  • 2 oz Pecorino cheese
  • 3 oz Parmesan cheese
  • Freshly ground black pepper
  • 4 oz guanciale (or pancetta or bacon)
  • 10 oz spaghettoni or thick spaghetti

Method

6 steps
  1. Mix eggs with grated Parmesan, Pecorino and black pepper.
  2. Cook guanciale in a frying pan over medium-low heat until its fat renders and the lean meat caramelizes. Remove a couple of tablespoons of fat and reserve.
  3. Cook pasta in salted water for 10–13 minutes, according to the packet, until al dente.
  4. Reduce pan heat to medium-low. Transfer pasta into pan with rendered fat and toss.
  5. Remove pan from heat. Add egg mixture and toss vigorously to avoid scrambling. Stir in a few ounces of pasta water to make a creamy sauce.
  6. Divide among four plates. Drizzle with reserved guanciale fat and finish with shaved cheese and black pepper.
