  • 4 rashers smoked bacon
  • 2 cloves garlic, roughly chopped
  • bay leaves
  • a couple of celery stalks
  • 2 small onions
  • carrots
  • kale, purple and green
  • savoy cabbage
  • vegetable stock cube
  • 400 g tinned tomatoes
  • 1 pint boiling water
  • 400 g butter beans
  • 400 g cannellini beans
  • pasta odds and ends
  • parmesan cheese

Method

13 steps
  1. Heat a large pan over medium-high heat and add the smoked bacon, cooking until golden and caramelized.
  2. Add olive oil and the chopped garlic to the pan with the bacon.
  3. Add chopped carrots, celery, and onions to the pan and cook until fragrant.
  4. Add bay leaves and stir.
  5. Add chopped kale, savoy cabbage, and any other greens, and cook for a few minutes.
  6. Sprinkle in vegetable stock cube and add tinned tomatoes, stirring to combine.
  7. Pour in a pint of boiling water and bring to a boil.
  8. Add butter beans and cannellini beans, stirring well.
  9. Finely slice the cabbage and kale, then add to the soup.
  10. Top up with additional boiling water if needed, cover with a lid, and simmer for a few minutes.
  11. Add pasta odds and ends to a tea towel, bang to break, then add to the soup.
  12. Simmer until the pasta is cooked, about 10-15 minutes.
  13. Serve with a sprinkle of parmesan cheese.
