  • a few knobs of unsalted butter
  • a cinnamon stick
  • a couple of star anise
  • 4 or 5 cloves
  • 1 medium red cabbage
  • sea salt
  • freshly ground black pepper
  • 1 tablespoon runny honey
  • a splash of red wine
  • a splash of red wine vinegar

Method

12 steps
  1. Pop a pan onto the hob, turn the heat to medium, and add some unsalted butter.
  2. Add a cinnamon stick, a couple of star anise, and 4 or 5 cloves to the butter.
  3. Chop the red cabbage in half, cut out the hard core at the bottom, and thinly slice the cabbage evenly.
  4. Put the sliced cabbage into a bowl.
  5. Add the sliced cabbage to the pan with the spiced butter and stir well to coat.
  6. Season with a good pinch of sea salt and a few twists of freshly ground black pepper.
  7. Cook for a couple of minutes, then add a tablespoon of honey and stir through.
  8. Pour in a splash of red wine and cook for a few minutes to burn off the alcohol.
  9. Add a splash of red wine vinegar and stir well.
  10. Cook for 15 to 20 minutes, tasting and adding water if needed to keep braising.
  11. Continue cooking until the cabbage is tender with a slight bite, then reduce the liquid until sticky and rich.
  12. Remove the cinnamon, star anise, and cloves before serving.
