Ingredients
- 200g softened unsalted butter
- 200g caster sugar
- 4 large eggs
- 1 tsp vanilla extract
- 200g self-raising flour
- 2 tbsp milk
- 300ml double cream
- 250g mascarpone
- 2-3 tbsp icing sugar
- 300g fresh strawberries
Method
- Preheat oven to 170°C fan and line two 20cm round cake tins.
- Cream butter and caster sugar until light and pale.
- Beat in eggs one at a time, then add vanilla extract.
- Fold in self-raising flour and milk until smooth and airy.
- Divide batter evenly between tins and level.
- Bake for 18-22 minutes until golden and springy.
- Cool cakes completely.
- Whip double cream until just thickened.
- Fold in mascarpone, icing sugar, and vanilla extract until smooth.
- Place one sponge on serving plate and spread with mascarpone cream.
- Scatter sliced strawberries over cream.
- Place second sponge on top and finish with remaining cream and strawberries.
- Serve on the day for best freshness.
