Delicious Lancashire Hotpot (A Proper British Classic!)

A gluten-free, protein-boosted take on Lancashire hotpot: tender lamb and lentils under a golden, overlapping potato lid. The lentils thicken the gravy and add protein without changing the dish's character, and a splash of Worcestershire-style gluten-free seasoning keeps the savoury depth. It's a one-pot, slow-baked comfort dish that's even better the next day.

  • 900 g lean lamb shoulder, cut into 3 cm chunks
  • 1 tbsp gluten-free plain flour (or cornflour)
  • 1 tbsp olive oil
  • 2 medium onions (about 300 g), sliced
  • 2 medium carrots (about 200 g), sliced into 1 cm rounds
  • 150 g dried green or brown lentils, rinsed
  • 500 ml gluten-free lamb or beef stock
  • 1 tbsp gluten-free Worcestershire sauce
  • 1 tsp dried thyme
  • 1 bay leaf
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 900 g floury potatoes (such as Maris Piper), peeled and sliced into 3 mm rounds
  • 25 g unsalted butter, melted
  • Fresh parsley, chopped, to finish (optional)

Method

7 steps
  1. Heat the oven to 160°C fan (180°C conventional, gas mark 4). Pat the lamb dry, then toss with the gluten-free flour, salt and pepper in a bowl until evenly coated.
  2. Heat the olive oil in a large ovenproof casserole over medium-high heat. Brown the lamb in two batches, about 3–4 minutes per batch, then set aside on a plate.
  3. Lower the heat to medium. Add the onions and carrots to the casserole and cook for 6–8 minutes until softened and lightly golden, scraping up the browned bits.
  4. Stir in the lentils, stock, gluten-free Worcestershire sauce, thyme and bay leaf. Return the lamb and any juices to the pot, bring to a gentle simmer, then cover and transfer to the oven for 1 hour.
  5. Meanwhile, toss the potato slices with the melted butter. Remove the casserole from the oven, take off the lid, and arrange the potatoes in overlapping circles over the lamb, seasoning lightly with a pinch of salt.
  6. Return uncovered to the oven and bake for 45–55 minutes, until the potatoes are tender and browned at the edges and the lamb is fork-tender. If the top needs more colour, finish under a hot grill for 3–5 minutes, watching closely.
  7. Rest for 10 minutes, scatter with parsley if using, and serve with buttered greens or pickled red cabbage.

Recipe notes

Helpful tips

  • Slicing the potatoes thinly and evenly is the key to a crisp, cooked-through lid.
  • Green lentils hold their shape better than red; either works, but red will thicken the gravy more.
  • A hot grill at the end gives the potatoes a golden finish if your oven runs cool.

Equipment

  • Large ovenproof casserole with lid (about 3.5–4 litre capacity)
  • Sharp knife and chopping board
  • Vegetable peeler
  • Mixing bowls
  • Measuring jug
  • Wooden spoon

Storage

Cool within 2 hours, refrigerate in an airtight container for up to 3 days, or freeze for up to 2 months. Reheat thoroughly until piping hot, adding a splash of stock if the gravy has thickened.

Additional tips

  • Use certified gluten-free stock, flour and Worcestershire sauce, and check labels for cross-contamination if cooking for someone with coeliac disease. Handle the hot casserole carefully and use oven gloves.
