  • 1 tbsp vinegar or lemon juice
  • avocado
  • sea salt flakes
  • cracked black pepper
  • quarter of a lemon
  • eggs
  • butter spread
  • chili oil
  • flat leaf parsley

Method

10 steps
  1. Bring a saucepan of water to a boil over high heat.
  2. Add 1 tbsp vinegar or lemon juice to the boiling water.
  3. Prepare the avocado: cut around the seed, twist open, scoop out flesh into a bowl.
  4. Add sea salt flakes, cracked black pepper, and a squeeze of quarter lemon to the avocado, then mash with a fork.
  5. Crack eggs into the boiling water and cook for 2 and 1/2 minutes for a soft poach.
  6. Drain the poached eggs and place them on a paper towel or tea towel.
  7. Spread butter on bread slices, then spoon mashed avocado over the buttered bread.
  8. Top with the poached eggs.
  9. Drizzle with chili oil.
  10. Garnish with cracked black pepper and flat leaf parsley.
