Ingredients
- 5 flour tortillas – 10-inch (25cm) each
- 10 oz (300g) cheese (Mozzarella or Cheddar), grated
- 1 tbsp olive oil
- 1 medium onion (5 oz-150g), diced
- 3 cloves garlic
- 1 pound (500g) lean ground beef
- 1 tbsp (7g) smoked paprika
- 1 tsp (3g) chili powder
- 2 tsp (7g) ground cumin
- 1 tbsp (3g) thyme
- 1/3 cup (70g) tomato paste
- 1 tsp (5g) salt
- freshly ground black pepper
Method
- Heat olive oil in a pan.
- Add diced onion and garlic, sauté until soft.
- Add ground beef and cook until browned.
- Stir in smoked paprika, chili powder, cumin, thyme, tomato paste, salt, and pepper.
- Cook the beef mixture until well combined and heated through.
- Place a tortilla on a flat surface.
- Spread grated cheese evenly over half of the tortilla.
- Add a portion of the beef mixture on top of the cheese.
- Fold the tortilla over to cover the filling.
- Cook the quesadilla in a hot pan until the tortilla is golden and cheese is melted.
- Repeat with remaining tortillas and filling.
- Cut quesadillas into wedges and serve.
