Ingredients
- 800g puff pastry
- 2 eggs
- 1 egg yolk
- 10g vanilla sugar
- 120g sugar
- 35g cornstarch
- 200g frozen strawberries
- 300ml milk
- 50g butter
- 200g fresh strawberries
- 200ml cream 33%
- 50g powdered sugar
Method
- Bake the puff pastry until golden brown and let it cool.
- Beat together eggs, egg yolk, vanilla sugar, sugar, and cornstarch.
- Heat milk and butter, stir in the egg mixture, and cook the cream until it thickens.
- Add frozen strawberries to the cream and let it cool.
- Whip the cream with powdered sugar until stiff.
- Slice fresh strawberries.
- Layer puff pastry, strawberry cream, fresh strawberries, and cream alternately.
- Chill the cake before serving.
