Breakfast Burrito with 41g Protein

Ingredients

  • 1 medium tortilla
  • 100g ground turkey
  • 1 yellow onion
  • 1 egg
  • 50g egg whites
  • 15g cheddar
  • 10g soy sauce
  • 5g honey
  • 5g gochujang
  • 1/4 tsp garlic powder
  • 1/4 tsp cumin
  • salt
  • black pepper
  • oil

Method

  1. Dice the onion.
  2. Mix soy sauce, gochujang, and honey in a glass.
  3. Fry onions with a pinch of salt for 3 minutes.
  4. Add oil and ground turkey, separate meat with spatula.
  5. Let turkey sit for 1 minute, then add cumin, garlic powder, and black pepper.
  6. Cook turkey for 1 more minute.
  7. Add sauce mixture and combine.
  8. Add egg and egg whites, stir for 45-60 seconds until cooked.
  9. Remove pan from heat and transfer meat and eggs to a plate to cool.
  10. Place mixture into tortilla with cheddar cheese and roll into burrito.
  11. Toast burrito in pan with oil on all sides until brown.
  12. Wrap in paper towel and roll up.
  13. Store burritos in zip lock bag in freezer up to 3 months.
  14. Microwave for 2-3 minutes before eating.
