14 ingredients- 2 tablespoons olive oil
- 1 medium onion, diced
- 1 large carrot, diced
- 2 celery stalks, diced
- 2 garlic cloves, minced
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/2 teaspoon fine salt
- 1/2 medium green cabbage, chopped
- 1 can (14 ounces) diced tomatoes
- 4 to 6 cups vegetable broth, depending on the preferred consistency
- 1 to 2 tablespoons fresh lemon juice
- 1/4 cup roughly chopped fresh parsley
- Freshly cracked black pepper, to taste

Method
8 steps- Heat the olive oil in a large pot over medium-high heat.
- Add the onion, carrot and celery. Cook for 4 to 5 minutes, stirring occasionally, until slightly softened.
- Add the garlic, oregano, basil and salt. Stir for approximately 1 minute, until fragrant.
- Add the chopped cabbage and cook for 5 minutes, stirring frequently, until it begins to soften.
- Pour in 4 cups of vegetable broth and add the diced tomatoes.
- Simmer uncovered for approximately 10 minutes, or until the vegetables reach the preferred tenderness. Add more broth if a thinner soup is desired.
- Remove the pot from the heat. Stir in 1 tablespoon lemon juice, the parsley and cracked black pepper.
- Taste and add the remaining lemon juice or additional seasoning if needed, then serve.
Helpful tips
- Begin with 4 cups of broth and add more only if a thinner soup is preferred.
- Green cabbage provides the best balance of tenderness and sweetness, although napa cabbage also works.
- Add the lemon juice after removing the soup from the heat to preserve its fresh flavour.
- For a heartier soup, add cooked beans, chickpeas, lentils, chicken or another cooked protein.
- Additional vegetables such as peppers, courgette, kale or spinach may be added.
- The soup may thicken slightly during storage; add a splash of broth when reheating if necessary.
Storage
Thaw frozen soup in the refrigerator overnight when possible. Reheat on the stovetop or in the microwave until steaming hot throughout.
Additional tips
- Check the vegetable broth label if gluten, celery or other allergens are a concern. Take care when chopping the cabbage and handling the hot soup. Cool leftovers promptly before refrigerating.
