Ingredients
- 300g noodles (preferably egg noodles)
- 450g chicken breast
- 1/2 cabbage
- 2 carrots
- 6 scallions
- 1/2 tbsp ginger
- 1 tbsp garlic
- 2 eggs
- 2 tbsp cornstarch
- 1/4 tsp MSG (optional)
- 1/2 tsp sesame oil
- 1 tbsp light soy sauce
- 1.5 tbsp dark soy sauce
- 2 tbsp oyster sauce
- 1 tsp sugar
- 1 tbsp water
- cooking oil
- salt and pepper to taste
Method
- Slice chicken breast into thin strips and marinate with light soy sauce and water for 10 minutes.
- Coat marinated chicken with cornstarch and set aside.
- Thinly slice cabbage and cut carrots into matchsticks.
- Cut scallion greens into 2-inch pieces and mince ginger, garlic, and scallion whites.
- Mix light soy sauce, dark soy sauce, oyster sauce, sugar, and water to prepare the sauce.
- Cook noodles 2 minutes less than package instructions, drain, rinse with cold water, coat with oil, and set aside.
- Heat oil in wok and scramble eggs, then set aside.
- Stir fry chicken on high heat until cooked and transfer to a bowl.
- Stir fry ginger, garlic, and scallion whites for 1 minute.
- Add carrots and stir fry for 2 minutes.
- Add cabbage and stir fry until lightly charred, then transfer to the bowl with chicken.
- Stir fry noodles for a couple of minutes until slightly fried.
- Add chicken and vegetables back to wok, pour in sauce, and stir fry for a couple of minutes.
- Season with black pepper and optional MSG.
- Add sesame oil, scrambled eggs, and scallion greens, adjust salt and pepper, stir fry for 2-3 minutes, then serve.
