Chicken Chow Mein

Ingredients
- 300g noodles (preferably egg noodles)
- 450g chicken breast
- 1/2 cabbage
- 2 carrots
- 6 scallions
- 1/2 tbsp ginger
- 1 tbsp garlic
- 2 eggs
- 2 tbsp cornstarch
- 1/4 tsp MSG (optional)
- 1/2 tsp sesame oil
- 1 tbsp light soy sauce
- 1.5 tbsp dark soy sauce
- 2 tbsp oyster sauce
- 1 tsp sugar
- 1 tbsp water
- cooking oil
- salt and pepper to taste
Method

Slice chicken breast into thin strips and marinate with light soy sauce and water for 10 minutes.

Coat marinated chicken with cornstarch and set aside.

Thinly slice cabbage and cut carrots into matchsticks.

Cut scallion greens into 2-inch pieces and mince ginger, garlic, and scallion whites.

Mix light soy sauce, dark soy sauce, oyster sauce, sugar, and water to prepare the sauce.

Cook noodles 2 minutes less than package instructions, drain, rinse with cold water, coat with oil, and set aside.

Heat oil in wok and scramble eggs, then set aside.

Stir fry chicken on high heat until cooked and transfer to a bowl.

Stir fry ginger, garlic, and scallion whites for 1 minute.

Add carrots and stir fry for 2 minutes.

Add cabbage and stir fry until lightly charred, then transfer to the bowl with chicken.

Stir fry noodles for a couple of minutes until slightly fried.

Add chicken and vegetables back to wok, pour in sauce, and stir fry for a couple of minutes.

Season with black pepper and optional MSG.

Add sesame oil, scrambled eggs, and scallion greens, adjust salt and pepper, stir fry for 2-3 minutes, then serve.
