Recipe notes

Helpful tips

  • Use chicken thighs for a richer flavour and tender texture.
  • Keep the soup at a gentle boil while the chicken cooks.
  • Sauté the onion and celery before adding them to the soup for extra flavour.
  • Shred the chicken into bite-sized pieces before returning it to the pot.
  • Add the garlic and fresh dill near the end of cooking so their flavour stays fresh.
  • Taste the soup before adding extra salt, especially if using regular chicken broth.

Equipment

  • Large soup pot
  • Large frying pan
  • Sharp knife
  • Chopping board
  • Wooden spoon
  • Two forks for shredding chicken

Storage

Cool leftovers promptly and refrigerate in an airtight container for up to 3 days. Reheat until piping hot throughout. The pasta will continue to soften as the soup sits.
