Ingredients

  • 2 cups All Purpose flour
  • 2 teaspoons Baking powder
  • 1/2 teaspoon Baking soda
  • 1/4 teaspoon Salt
  • 1/2 cup Butter (melted)
  • 3/4 cup Sugar
  • 2 Eggs
  • 1 teaspoon Vanilla extract
  • 1 cup Buttermilk
  • 1 cup Dark Chocolate chips

Method

  1. Preheat oven to 425°F (218°C). Place rack in center of oven. Line standard muffin pan with paper liners.
  2. In a large bowl, whisk flour, baking powder and salt.
  3. In a separate bowl, whisk together the granulated sugar, melted butter, eggs, milk, and vanilla extract until well combined.
  4. Sift in the dry ingredients and mix until combined.
  5. Add chocolate chips and mix.
  6. Divide the batter into the 12 muffin cups. Sprinkle some chocolate chips on top of each muffin.
  7. Bake at 425°F (218°C) for 5 minutes, then reduce oven temperature to 350°F (180°C) and continue to bake for 15-18 minutes or until a toothpick inserted into the center comes out clean with a few crumbs or melted chocolate.
  8. Allow to cool for 10 minutes in the pan before serving.
