Ingredients
- 2ΒΌ cups (500g) Cottage cheese
- 1/3 cup (33g) Cocoa powder
- 250g (8.8oz) Dark chocolate, high-quality
- 2 tablespoons coconut oil or melted butter
Method
- Process the cottage cheese in a food processor or blender until smooth and creamy, scraping down the sides to remove lumps.
- Chop the dark chocolate into small pieces and melt it using a double boiler or microwave in 30-second intervals, stirring until fully melted.
- Add cocoa powder and coconut oil to the blended cottage cheese and blend until smooth.
- Transfer the mixture to a bowl, add the melted chocolate, and mix until combined and smooth.
- Line an 8-inch (20cm) square baking dish with parchment paper, pour the fudge mixture into the dish, and smooth the top with a spatula.
- Refrigerate for at least 3 hours or until firm. For a firmer texture, freeze for 30β60 minutes. Slice and serve.
