  • 1/3 cup (33g) Cocoa powder
  • 250g (8.8oz) Dark chocolate, high-quality
  • 2 tablespoons coconut oil or melted butter

Method

    Process the cottage cheese in a food processor or blender until smooth and creamy, scraping down the sides to remove lumps.

    Chop the dark chocolate into small pieces and melt it using a double boiler or microwave in 30-second intervals, stirring until fully melted.

    Add cocoa powder and coconut oil to the blended cottage cheese and blend until smooth.

    Transfer the mixture to a bowl, add the melted chocolate, and mix until combined and smooth.

    Line an 8-inch (20cm) square baking dish with parchment paper, pour the fudge mixture into the dish, and smooth the top with a spatula.

    Refrigerate for at least 3 hours or until firm. For a firmer texture, freeze for 30–60 minutes. Slice and serve.
