Whole recipe (8 servings): 1552 kcal

  • 1 small onion, finely chopped
  • 2 or 3 bay leaves
  • 568 ml carton of whole milk
  • 50 g butter
  • some seasoning
  • 200 g crustless day old white bread, torn into even-sized pieces
  • half a teaspoon ground nutmeg
  • 4 tbsp double cream
  • extra bay leaf for finishing

Method

9 steps
  1. Place a small finely chopped onion into a pan.
  2. Tear two or three bay leaves in half and add them to the pan with the milk, butter, and seasoning.
  3. Bring to the boil, then reduce the heat and simmer for about 20 minutes until the onion has softened.
  4. Fish out the bay leaves and discard them.
  5. Roughly tear the bread into even-sized pieces and stir into the milk mixture with a wooden spoon.
  6. Add about half a teaspoon of ground nutmeg and some seasoning, then stir in.
  7. Return the pan to the heat and bring to a simmer for about 3 to 4 minutes.
  8. Stir in 4 tablespoons of double cream.
  9. Finish with a knob of butter and an extra bay leaf before serving.
