  • 1 large chicken breast
  • pepper, to taste
  • salt, to taste
  • parmesan or Romano cheese, to taste
  • flour, for coating
  • shallots or onion, chopped
  • mushrooms, sliced
  • garlic, minced
  • chicken broth
  • cream, for sauce
  • parsley, chopped
  • potatoes, sliced
  • clarified butter or cooking oil, for frying

Method

  1. Cut the chicken breast in half horizontally.
  2. Season the chicken with pepper, salt, and cheese, then coat with flour.
  3. Heat clarified butter or oil in a pan to 365°F (185°C).
  4. Cook the chicken until golden and plumped, then remove and set aside.
  5. In the same pan, add chopped shallots or onion and cook until fragrant.
  6. Add sliced mushrooms, cook until water evaporates, then add garlic and cook briefly.
  7. Deglaze with chicken broth, then add cream and simmer.
  8. Return chicken to the pan, cook until fully cooked (internal temperature 155°F).
  9. Slice potatoes and cook in butter until golden, covering initially to soften.
  10. Add parsley to potatoes.
  11. Finish the sauce with a touch of butter off heat for creaminess.
  12. Plate the potatoes, place the chicken on top, and spoon the sauce over.
