  • 6 boneless, skinless chicken thighs (about 2 lb), cut into 1-inch strips
  • 1 tbsp avocado oil
  • 6 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 1 tsp ground ginger
  • 1/3 cup soy sauce
  • 3 tbsp mirin
  • 2 tbsp brown sugar
  • 1 tbsp rice wine vinegar or apple cider vinegar
  • 1 tsp ground black pepper
  • 1 tbsp cornstarch
  • 1 tbsp water
  • 1 tsp toasted sesame seeds
  • 2 green onions, sliced

Method

7 steps
  1. Prepare the chicken: Cut the chicken thighs into 1-inch strips.
  2. Heat a large skillet or wok over medium-high heat and add 1 tablespoon of avocado oil.
  3. Add the minced garlic and minced fresh ginger to the hot oil and sauté until fragrant, about 30 seconds.
  4. Add the chicken strips to the skillet and cook, stirring occasionally, until browned and cooked through.
  5. Meanwhile, in a small bowl, whisk together soy sauce, mirin, brown sugar, rice wine vinegar, ground black pepper, cornstarch, and water to make the sauce.
  6. Pour the sauce over the cooked chicken in the skillet and stir to coat evenly.
  7. Remove from heat and garnish with toasted sesame seeds and sliced green onions before serving.
