Creamy Lemon Tagliatelle

Ingredients
- 250 g cooked tagliatelle (8.8 oz)
- 2 tbsp olive oil
- 2 garlic cloves
- Zest of one lemon

- 5.1 fl oz vegan cream (oat or soy)
- 1 tsp turmeric for the yellow color
- 1 tsp sweet paprika
- Salt
- Freshly ground black pepper
- 1 tsp chili flakes
- Dried baby chilies or chunky chili pieces (to top)
- Fresh thyme sprigs (to top)
- A little vegan Parmesan powder (optional, to top)
- Extra black pepper (to top)
Method

Cook the tagliatelle according to the package instructions.

In a pan, heat olive oil and sauté minced garlic until fragrant.

Add lemon zest, lemon juice, turmeric, and sweet paprika to the pan.

Pour in the vegan cream and stir until well combined.

Season with salt, freshly ground black pepper, and chili flakes.

Mix in the cooked tagliatelle, ensuring the pasta is well coated in the sauce.

Serve topped with dried baby chilies, fresh thyme sprigs, and a sprinkle of vegan Parmesan powder if desired.
